The best pasta EVER

This pasta is BOMB!
Matt isn't a fan of red sauce pasta.
Whenever I would make it he would grumble under his breath :/

We all LOVE this!
I lessen up the red pepper flakes for Ethan.
I also just use water. Its a little more 'watery' but if you let it boil down without the noodles or have the lid off while your setting the table it thickens.
I also use fresh tomatoes chopped and gluten free noodle from Trader Joes :D

Potato and Peppers




So this meal was a creation from me.

Super easy but SO yummy!


Cube some potatoes and slice 2-3 peppers.
2tbs oil (I used coconut oil but olive oil is a good choice)
half an onioin
2-3 garlic
1/2 tsp red pepper flakes (more or less)
1/4 cumin
1/4 chilli pepper (more or less)
salt and pepper to taste

Add oil with onion and garlic in a ceramic/cast iron until soft. Add spices for a min and then add potato and peppers.
cook on medium and stir every 4-5 min with lid on.

After the potatoes start to cook a bit you might need to add a few tbs of water but less is key as you don't want the potatoes to get soggy. You want them firm but cooked.


You shouldn't use a stainless steal skillet as it will stick and not turn out as well and a non stick pan, could work but the flavors might not be the same. Ceramic/cast iron does something amazing with flavor I tell ya!

Add eggs and have it be a breakfast burrito!

Sexy Joe's

So once upon a time back a long time ago I used to make Sexy Joe's from the Biggest Looser Cookbook.
Well I was going through my old recipes and found it again and decided to make it.
I'm not giving them credit for the recipe since I really made it up and did what my nose told me to but I looked at the recipe. I copied the name cuz I like it???

Sexy Joes



1lb of ground beef(could be chicken I suppose?)
1 green, red, or yellow pepper
3 cloves of garlic chopped
1-2 tbs of coconut oil or oil of choice
1/4 of red or yellow onion
2 big to medium tomatoes (can do canned tomatoes if you want)
1 tbs tomato paste
2 tsp honey
1 tsp sugar
1 tbs vinegar
1 tsp apple cider vinegar
1/2 tsp cumin
2 tsp chili powder
1/4 tsp(less or more) red pepper flakes
generous amount of salt
pepper
pinch of cinnamon



What you do:

Brown meat in a pan. While thats cooking heat oil in a pot and add onions and garlic until fragrant. add tomatoes(or canned) and tomato paste. Have the heat on medium to get the juices from the tomato going if using fresh. Once tomatoes are getting softer add honey, sugar, vinegars, spices, salt and pepper.

Once the meat is cooked rinse it just a little bit and add some salt with the peppers.

Once the sauce is thicker(10 mins?) add to the meat and peppers. Let simmer until desired consistency.
I did it until I felt like it was think enough. I have it on medium heat.

Serve with rice and make a lettuce wrap, put on buns or pida like hubby did and add spinach for extra goodness.

White bean tortilla heaven!



When I say heaven I mean it!
This meal is my top 3 meals to date. It rocks in every way!
*fast*yummy*easy clean-up

My toppings include: Avocado, tomatoes, spinach(lettuce or sprouts work) carrots, red onion.

I made my tortillas only because Sprouts was out of my Food for life gluten free tortillas which kind of was a blessing because really these tortillas are A-mazing!

Notes: I did not use shortening but coconut oil and guar gum in place of xanthan gum and coconut sugar in place of white sugar.

Recipe:

STEP 1
In a medium bowl, combine the following:

2 15-ounce cans white beans, rinsed and drained*
2 Tbsp. extra-virgin olive oil
1 tsp. sea salt
¼ tsp. black pepper
¼ tsp. cayenne pepper
1 small red onion (or 2 small shallots), chopped
1 small clove garlic, finely chopped or minced
juice from half of one lemon

Roughly mash the mixture with a potato masher.

Notes: You can use garbanzo beans if you fancy
